All Purpose Avocado Dressing

By Maggie Zhu

 ¼ cup cilantro
¼ cup chopped fresh herbs, such as parsley, mint, dill, basil, or other
 1 clove garlic
 1 green onion
1 small jalapeno or 1/4 green bell pepper, seeded and roughly chopped (optional)
 1 tsp salt
 1 pinch black pepper
 2 pinches sugar
3 tbsp lemon juice, or favorite salad vinegar
1 cup milk or plant milk, such as almond milk
 ½ large avocado
 1 tbsp tahini (or mayonnaise)
 1 tbsp olive oil
Make the salad dressing

Add the herbs, garlic, green onion, jalapeno, salt, pepper, sugar, lemon juice, and 1/4 cup water (or milk) to a blender, blend for 30 seconds. Add the avocado, tahini or mayonnaise, and olive oil and blend for another minute. Check the consistency, adjust by adding extra water (or milk if needed). For dipping sauce for sandwich/wrap sauce, you should keep the dressing a bit thicker.

How to use the dressing

As a dipping sauce: Serve Little Leaf Farms Baby Crispy Green Leaf with carrot and / or celery sticks on a platter with the sauce on the side.

As a salad dressing: Combine 1 4-oz. Little Leaf Farms Spring Mix, 1 cup chopped veggies, and 1/2 cup cooked protein in a serving bowl. Add the dressing and toss together before serving.

As a sauce for grain bowl: In a serving bowl add 1/2 cup of cooked grains of your choice, 4-oz. Little Leaf Farms Baby Red & Green Leaf Mix, 1/2 cup chopped veggies, and 1/3 cup cooked protein of your choice. Drizzle the dressing on top and serve.

As a sauce for sandwich and wraps: Add a bit more mayonnaise (or tahini) to the all-purpose sauce to add creaminess (optional). To make a sandwich, layer toasted sandwich bread, all-purpose sauce, Little Leaf Farms Baby Crispy Green Leaf, a cooked protein of your choice such as grilled steak or pulled pork, and sliced cheese. To make a wrap, layer a large tortilla with canned black beans, canned corn, Little Leaf Farms Crispy Green Leaf, a cooked protein of your choice, and the sauce. Assemble and serve.
