Avocado Sunshine Salad with Green Goddess Dressing

Avocado Sunshine Salad
Ingredients:
For the Salad
 4 oz Little Leaf Farms Baby Crispy Green Leaf Lettuce
 1 avocado, peeled and cut into ½” slices
 1 medium watermelon radish, trimmed and sliced thin
 1 medium orange, peeled and segmented
For the Dressing
 1 cup plain yogurt
 ½ cup fresh parsley
 ½ fresh dill
 ¼ fresh mint
 ¼ of an avocado
 2 garlic cloves, crushed
 1 tsp dijon mustard
 ¼ cup extra virgin olive oil
 2 tbsp fresh lemon juice
 Salt and pepper to taste
 
Directions:

In a food processor or blender combine all of the ingredients until they are well combined. Season to taste. Leftovers can be stored in a jar in the fridge and used for veggie dipping throughout the week.

Cover a large platter with Baby Crispy Green Leaf Lettuce, layer on the avocado, watermelon radish, and orange segments. Top with a generous drizzle of green goddess dressing and serve!
