Dipping Dressings

Lemon Pesto Dipping Dressing, Tahini Turmeric Dipping Dressing, Whipped Herb Ricotta Dressing

1. Lemon Pesto Dipping Dressing
 ½ cup pesto, store bought or homemade
 1 cup plain full fat yogurt
 4 tbsp fresh lemon juice
 salt and pepper to taste
2. Tahini Turmeric Dipping Dressing
 ½ cup tahini
 ¼ cup extra virgin olive oil
 1 tbsp apple cider vinegar
 2 tsp honey mustard
 1 tsp ground turmeric
 2 garlic cloves, crushed
 ¼ cup ice water
 salt and pepper to taste
3. Whipped Herb Ricotta Dressing
 8 oz full fat ricotta
 ½ cup extra virgin olive oil
 1 small shallot, minced
 2 tbsp lemon juice
 zest of one lemon
 ¼ cup fresh dill, roughly chopped
 ¼ cup water
 salt and pepper to taste
For the Lemon Pesto Dipping Dressing

In a medium bowl whisk all of the ingredients together until well combined. Finish with salt and pepper to taste. Serve with your favorite Little Leaf Farm greens & fresh vegetables!

For the Tahini Turmeric Dipping Dressing

Place all of the ingredients in a food processor and pulse until you have a peanut butter like consistency. With the food processor on high, slowly pour in the ice water, excluding the ice cubes, until the dressing is thinner and silky in appearance. Finish with salt and pepper to taste. Serve with your favorite Little Leaf Farm greens & fresh vegetables!

For the Whipped Herb Ricotta Dressing

Place all of the ingredients in a blender or food processor. Whip them together until everything is combined and you have a creamy but slightly runny texture. Finish with salt and pepper to taste. Serve with your favorite Little Leaf Farm greens & fresh vegetables!
