Farro and Sweets Bowl With Roasted Garlic Dressing
8 oz Little Leaf Farms Spring Mix
1.50 cups cooked farro
1 medium sweet potato, sliced into ½” circles
2 tbsp coconut oil
¼ tsp salt
¼ tsp fresh ground black pepper
¼ tsp garlic powder
½ of a small red onion, sliced into half moons
8 oz feta, crumbled
½ cup pistachios, roughly chopped
Roasted Garlic Dressing
¼ cup roasted garlic, store-bought or homemade
½ cup extra virgin olive oil
1 tbsp Dijon mustard
¼ tbsp white wine vinegar
3 tbsp chopped parsley
Juice of one lemon
Pinch of salt
½ tsp fresh ground black pepper
Air Fried Sweet Potato
In a bowl, combine the sweet potato slices, coconut oil, salt, pepper, and garlic powder. Toss until both sides are coated.
Lay the potato slices in a single layer in the air fryer and cook for 5 minutes at 400*, flip and cook for an additional 4-5 minutes until golden.
Make the Dressing
In a blender or food processer, add all of the ingredients and blend until well emulsified and smooth.
Season with salt and pepper, adjusting to taste if necessary.
Assemble the Bowl
Fill a shallow bowl with the cooked farro.
Top half of it with Little Leaf Farms Spring Mix.
Add the sweet potatoes, onions, crumbled feta, and finish with a sprinkle of chopped pistachios.
Drizzle with a generous spoonful of Roasted Garlic Dressing & enjoy!
