This Summer Vibes Mason Jar Salad is a fresh, colorful, and convenient meal prep option packed with greens, grains, and protein. Start with all of the ingredients prepped, set up the four mason jars on your kitchen counter.
Fill the bottom of each jar with 2 tbsp of your favorite vinaigrette. This keeps the dressing separate from the lettuce, preventing it from getting soggy.
Add ingredients to each jar in the following order: chickpeas, quinoa, tomatoes, corn, cheese.
Top each jar with a generous handful of Little Leaf Farms Baby Crispy Green Leaf lettuce. Press the lettuce down lightly to make sure everything fits, then tightly seal each jar with a lid.
