In a medium sized bowl, combine the shredded chicken with the BBQ sauce and set aside.
In a separate bowl, combine the diced pineapple, red onion, and scallion. Add the lime, a pinch of salt and black pepper and mix well.
On a large plate or serving platter lay out the first layer of Sweet Baby Butter Leaf lettuce. Top them with two more leaves, alternating their directions to make the base wide enough to hold the filling and to form little lettuce cups.
Starting with the chicken, fill the center of the layered lettuce with about 2-3 tbsp depending on the size of the chicken. Garnish each portion with a generous spoonful of the pineapple onion mixture & enjoy!
