Ingredients:
For the Salad
2 oz soba noodles
1 medium carrot
½ cup shredded red cabbage
¼ cup edamame
1 tbsp sliced green onion
1 ½ cups Little Leaf Farms Baby Spring Mix
drizzle of extra virgin olive oil
For the Sesame Ginger Dressing
1 tbsp extra virgin olive oil
2 tsp low sodium soy sauce
1 tsp rice wine vinegar
1 tsp honey
¼ tsp sesame oil
1 clove of garlic, minced
½ tsp fresh minced ginger

To make Mason Jar Soba Noodle Salad, cook the soba noodles according to package directions. Drain and rinse under cold water. Place in a bowl and lightly drizzle with extra virgin olive oil. Toss to coat and set aside.

Add all the sesame ginger dressing ingredients to a 16 ounce mason jar. Stir until combined.

In the following order, add the carrots, red cabbage, edamame, green onion, cooked soba noodles, and Little Leaf Farms Baby Spring Mix.

Cover, and store in the refrigerator for up to 2 days until you’re ready to eat.

When ready to enjoy, pour the salad into a bowl or on a plate, give it a mix with a fork, and enjoy!
