Backyard Barbecue Salad

Ingredients:
For the Salad
 8 oz Little Leaf Farms Baby Crispy Green Leaf
 ½ cup watermelon, cut into small cubes
 ½ cup sweet peppers, thinly sliced
 3 tbsp feta cheese, crumbled
 2 tbsp fried shallots
 ½ cup fresh basil
For the Dressing
 1 cup fresh basil, tightly packed
 ½ cup extra virgin olive oil
 ¼ cup white wine vinegar
 1 small shallot, finely diced
 1 tsp kosher salt

In a food processor or blender, combine 1 cup tightly packed fresh basil, 1/2 cup extra virgin olive oil, 1/4 cup white wine vinegar, 1 finely diced small shallot, and 1 teaspoon kosher salt. Blend until smooth and well combined. Taste and adjust seasoning if needed. This bright, herby dressing brings vibrant flavor to your barbecue salad.

Place 2 packs (8oz) of Little Leaf Farms Baby Crispy Green Leaf lettuce in a large salad bowl or serving platter. Drizzle with a few tablespoons of the dressing and gently toss to coat the greens evenly.

Top the dressed greens with 1/2 cup small, cubed watermelon and 1/2 cup thinly sliced sweet peppers. Sprinkle 3 tablespoons of crumbled feta cheese evenly over the salad.

Add 2 tablespoons of crispy shallots for crunch and scatter 1/2 cup fresh basil leaves over the top. Drizzle with the remaining dressing just before serving. This refreshing barbecue salad is perfect for summer cookouts, picnics, or as a light side for grilled meats.
