Wash the sweet potatoes and, using a fork, poke holes throughout. Place on a plate and microwave for about 5 minutes(check the sweet potatoes in 30-second increments after 5minutes. They should be cooked through and soft enough to pierce through easily with a knife). Let cool.
While the sweet potatoes cook, assemble the salad. Using a fork, shred the rotisserie chicken.
Add the salad kit ingredients to the kit. Toss with the dressing.
Serve salad with the baked sweet potato.
