Preheat oven to 350 degrees.
Cut your bread into cubes, about ¾ inch in size until you have about 4 cups of cubes.
Toss the cubed bread in a large bowl with 2-3 Tbsp of olive oil, until the pieces are well-coated but not soggy. Sprinkle the cubes with sea salt, fresh black pepper, and if desired, a pinch of Italian seasoning.
Arrange the cubed pieces in a single layer on a rimmed baking sheet and bake in the 350-degree oven for 10-12 minutes until golden brown, tossing halfway through the bake time.
Remove and let the croutons cool completely before adding to your favorite salad.
