Roasted Cauliflower Salad

Ingredients:
For the Roasted Cauliflower and Chickpeas
 1 small head of cauliflower, cut into bite-sized florets
 15 oz can chickpeas, rinsed and drained
 2 tbsp extra virgin olive oil
 1 tsp cumin
 1 tsp paprika
 ½ tsp garlic powder
 ¼ tsp fine sea salt
For the Sweet Tahini Dressing
 3 tbsp extra virgin olive oil
 3 tbsp tahini
 2 tbsp fresh lemon juice
 1 tbsp cold water
 1 tbsp pure maple syrup
 ¼ tsp fine sea salt
For the Salad
 4 oz Little Leaf Farms Sweet & Crispy Lettuce Blend
 1 ripe avocado, sliced
 ¼ cup sliced red onion
 
Directions:

Preheat the oven to 425°F. Line a large baking sheet with parchment paper.

Place the cauliflower and chickpeas on the prepared baking sheet. Drizzle with the olive oil and season with cumin, paprika, garlic powder, and sea salt. Toss to combine until everything is evenly coated, then spread evenly on the baking sheet. Bake for 20 minutes, flipping halfway.

Meanwhile, make the sweet tahini dressing. Place all the dressing ingredients in a bowl or jar. Whisk or cover and shake together until completely combined and smooth. Set aside.

Spread the Little Leaf Farms Sweet & Crispy Lettuce onto a serving plate or in a large bowl. Top with the roasted cauliflower chickpea mixture, avocado, and sliced red onion. Drizzle with the sweet tahini dressing, serve, and enjoy!
