Wheat Berry, Pomegranate, Apple, and Pistachio Salad

Ingredients:
For the Salad
 8 oz Little Leaf Farms Sweet Baby Butter Leaf Lettuce
 1 cup cooked wheat berries (cooked according to the package directions)
 ½ cup pomegranate seeds
 ½ cup chopped toasted pistachios
 2 apples diced up
 ½ cup mixed herbs chopped(I used parsley and mint, but you can use any fresh herbs!)
For the Pomegranate Dressing
 Juice of one lemon
 Zest of one lemon
 ½ cup pomegranate juice
 1 tsp honey
 1 tbsp Dijon mustard
 ½ tsp salt
 ¼ tsp black pepper
 1 tbsp Dijon mustard
 ½ cup extra virgin olive oil
 
Directions:
For the Dressing

Pour all ingredients in a jar and shake to combine.

For the Salad

In a large bowl, combine cooked wheatberries, apples, herbs, pomegranate, and pistachios and stir to combine.

Pour in the dressing and toss to coat. Check for seasoning.

Serve over a bed of Little Leaf Farms Greens.
